On cook day, tip it into the slow cooker and cook on LOW for 4 to 5 hours, until the chicken pulls apart with a fork and reads 165°F in the thickest piece. Cook on LOW for 6 to 7 hours. Turkey holds up to the longer time better than chicken breast does, so this is the batch you start before a full work day. Break up the meat and stir once at the end. It thickens as it sits, so if it looks soupy at hour six, leave the lid off for the last twenty minutes and let it reduce. 3. Salsa verde pork (about 5 servings)

Into a bag: 2 lb pork loin, one 16 oz jar of salsa verde, one chopped onion, and a spoonful each of cumin and garlic from the pantry.

Cook on LOW for 8 hours. Pork loin is the leanest cut on the shelf, so it will not fall into wet strands the way pork shoulder does. What you get instead is tender, sliceable, saucy pork that stays lean, which is the trade you want when the whole point is protein without a pile of fat. Keep it in its liquid until you portion it so it does not dry out. Spoon it into warm corn tortillas for quick tacos, or serve it over rice with a little of the salsa verde on top.

Prep day: forty minutes, one time

Here is the actual order of operations if you own one slow cooker, which most people do.

  1. Cook the rice first and let it cool while you work. A 2 lb bag makes more than enough for the week.
  2. Assemble all three freezer bags. Chop the onions and peppers, open the cans, dump, and label each bag with the meal name and its cook time. This is the only real work of the week and it takes about twenty minutes.
  3. Put the bag you plan to cook first in the fridge. Freeze the other two flat so they thaw fast later.
  4. On each cook day, empty one bag into the slow cooker in the morning and set the time. Come home, shred or stir, and portion into containers over rice.

How long everything keeps

Portion into containers once the food has cooled, not while it is steaming, or you get condensation and soggy rice.
