You build the raw meal, protein, vegetables, sauce, and seasoning, flat inside a bag, then freeze it. Weeks later you thaw one overnight, empty it into the slow cooker in the morning, and come home to dinner. The cooking is hands-off. The prep already happened when you had the energy for it.

  3. Pour in the sauce and seasoning. This is where flavor lives. A cup of broth, a can of crushed tomatoes, or a mix of soy sauce, honey, and garlic all work. Add your dry spices straight into the bag now.
  4. Press out the air and freeze flat. Seal the bag, push it flat, and lay it on a sheet pan in the freezer. Once solid, you can stand the bags up like files to save room.

Fill each bag no more than two-thirds full. A packed bag is hard to seal and hard to thaw, and an overfilled slow cooker doesn’t heat evenly.

One thing to hold back: dairy and tender vegetables. Cream, milk, cheese, and fresh herbs curdle or turn to sludge over a long cook. Three combos to start with

If a blank bag feels like too much, copy one of these for your first prep day.

Salsa chicken. Chicken thighs, a jar of salsa, a can of drained black beans, and a spoon of cumin. Cook it, shred the chicken right in the pot, and you’ve got taco filling, burrito bowls, or a topping for rice. This one is close to foolproof.

Storing and reheating the leftovers
